What is a Tagine?

First things first, a tagine is both a dish and the special pot it’s cooked in. The conical lid of the tagine pot helps steam circulate, tenderizing meat and melding flavors. From lamb and chicken to vegetables and seafood, tagines bring Moroccan traditions to life with every bite. Tagines are typically served with crusty Moroccan bread, perfect for soaking up the delicious sauce. In true Moroccan fashion, we use our hands to eat with the bread, savoring every flavorful bite.

 

1. Vegetable Tagine

This one is my favorite one. It’s the tagine I’m holding in my hands in the picture above. A vegetable tagine is a nutritious and easy-to-make dish that’s close to my heart. It uses seasonal veggies and Moroccan spices, with chermoula adding a burst of flavor.

Tips:

  • Use any veggies you have: carrots, zucchini, potatoes, peas, and tomatoes.
  • Layer the veggies that require more cooking first, after the onions and tomatoes at the bottom.
  • Cook on low heat to meld the flavors.

 

2. Beef Tagine with Caramelized Prunes

This tagine is also one of my all-time favorites, perfect for special occasions. The beef is slow-cooked with Moroccan spices and garnished with sweet, caramelized prunes. The combination of tender beef and the rich sweetness of the prunes creates a dish that is truly unforgettable.

Tips:

  • Marinate the beef overnight for deeper flavors.
  • Use a mix of olive oil and vegetable oil for richness.
  • Ensure the prunes are well caramelized to enhance their sweetness and add depth to the dish.

 

3. Moroccan Kefta Tagine (Ground Beef Tagine)

This tagine is a crowd-pleaser, featuring juicy ground beef meatballs in a zesty tomato sauce, spiced with cumin, paprika, and ginger.

Tips:

  • Blend onion, garlic, and herbs for a smooth base.
  • Cook the tomato sauce until the oil separates for richness.
  • Shape meatballs small for even cooking.

 

4. Beef Tagine with Meslalla Olives 

This dish from the Meknes region is another favorite, with succulent beef cooked with vibrant green Meslalla olives, offering a smoky-sweet flavor.

Tips:

  • Marinate beef with saffron, cumin, and paprika.
  • Pit and boil the olives to remove excess salt.
  • Use olive oil and smen (fermented butter) for authenticity.

 

5. Moroccan Fish Meatballs Tagine (Kefta del Hout)

Kefta del Hout is a delightful dish featuring fish meatballs in an aromatic tomato sauce. It beautifully blends fresh fish with rich Moroccan spices.

Tips:

  • Blend white fish filets with parsley, cilantro, garlic, and lemon juice.
  • Cook the tomato sauce with bay leaves for depth.
  • Let the fish mixture rest before shaping into meatballs.
